For the Millstone Peated Tawny Port Cask, barley, rye and grain are milled in typical Dutch mills. The above-average fermentation time of 7 days is followed by a slow distillation in Pot Stills, resulting in a fruity complexity in the distillate. For maturation, the Zuidam distillery can draw on a wide selection of first-class casks, which are stored at an Angels' Share of 4-6 per cent in the warm, dry climate of its own warehouse. For this bottling, which was neither coloured nor chill-filtered, casks were used that had previously been filled with spicy, fruity tawny port. Because the Single Malt was distilled from peated malt, complex notes develop with warm smoke and an elegant sweetness.
